The agave hearts are roasted over hot stones in a pit for three to five days, then ground to mash by horse powered stone mills. This is followed be extensive fermentation in wooden vats and a slow process of twice distilling in wood red clay or copper stills. The resulting flavours are smokey, deep and warm.
